We Love…..Chocolate Crackles

When I think of childhood parties, I think of fairy bread and chocolate crackles. So when I thought mmmm….what can I make that’s easy and fun for a weekend treat, I turned to chocolate crackles.

Then I got to thinking – wouldn’t these be fun as part of a table of mixed treats, or piled up in the middle of the tables for guests to nibble at, after the main event! (Make them more festive by decorating with silver or gold cachous (tiny sugar balls), or other edible sprinkles).

Recipe from the back of the Rice Bubbles packet:

4 cups Rice Bubbles cereal

1 cup dessicated coconut

1 cup icing sugar

250 Copha

3 tbsp cocoa

Method

In a large bowl, mix Rice Bubbles, icing sugar, coconut and cocoa.

Slowly melt the Copha in a saucepan over low heat. Allow to cool slightly. Add to Rice Bubble mixture stirring until well combined.

Spoon mixture into paper patty cases and refrigerate until firm.

So how easy is that? We’ve even made this into a ‘cake’ for a person sensitive to eggs and wheat flour. Just press a layer of chocolate crackle mixture into the base of a springform pan, set in the fridge. Press in another layer of rice bubbles mixed with melted white marshmallows, set, and layer again with chocolate crackle mixture until mixtures are used up. It was a hit with the ‘big kids’!!
